Color cirera picota intens; Estem davant d'un vi realment complex, amb aromes de fruita madura, cacau, herbes balsàmiques, menta ... un caràcter decididament elegant, amb cos, molt equilibrat i de gran acidesa. Una peça d'art.

Des d'una taula de formatges fins el filet més sofisticat. Sens dubte, ell és el protagonista ....

Fermentació amb temperatura controlada (24-28 º C)
Maceració: 28 dies;
Inici de la fermentació malolàctica en tanc i finalització en bóta
Suau filtrat

12 mesos en bótes franceses noves Nevers i Alier (228l);
Torrat mitjà i lleuger
Envelliment posterior en tanc durant 3 mesos abans d'embotellar

Edat dels ceps: 80-95 anys de Garnatxa vella, a una altitud de 500 m
sòl: argilós, granit, en terrasses.
